Grand and glorious weather for the 4th and a pretty good chance for good boat racing weather tomorrow.

So, here's the whole thing in a nutshell. We had a war. We fought and died for our independence so these people could vote.

HAPPY CHIMBORAZO DAY!

Today is the day we celebrate MOUNT CHIMBORAZO in Ecuador.

Because the earth bulges at the equator, Mount Chimborazo is actually farther from the center of the earth than Mount Everest.  This makes Chimborazo, technically, THE HIGHEST POINT ON EARTH. 

Another interesting fact is that, because of that bulge along the equator, New Orleans is six miles farther from the center of the earth than Lake Itasca which is the headwaters of the Mississippi.  You know what that means?

CABRITO DAYS

Today is ROAST LEG OF LAMB DAY which takes me back to my good old Cabrito days in Reynosa, Mexico.

For those of you who haven't been in that part of the world, Cabrito is king in Monterrey, Mexico and the state of Nuevo Leon.

The whole carcass of a goat kid is slowly cooked, on a spit, over a bed of glowing charcoal and seasoned with onion, garlic and green chilies.

John L., Katherine and I used to go across the border to Reynosa for this tasty delight about once a month.  With some ice cold beer, to wash it down, and a mariachi band playing in the background, you think you've died and gone to heaven!

 

One wouldn't, ordinarily, think of lamb when you think of Mexico but it was Jewish immigrants who founded the city of Monterrey which, of course, is why lamb is a must in that city and the state its in.
